Here is the recipe for the Crockpot chicken I made. 1 can rinsed and drained black bean 1 bag frozen corn 1 - 2 chicken breast (can be frozen) 1 jar of salsa put everything in the crockpot cook on low for @ 8 hours (I have cooked as long as 12 hours). Shred the chicken with a couple forks and mix everything together. Serve over rice. Serves 5-6 This is easy to make for a crowd just adjust the amounts, the cooking time doesn't change.
